| Abstract: | Símbolo ancestral, o azeite representa uma essência cultural que atravessa civilizações. É um traço identitário profundamente enraizado nos territórios que o produzem e desempenha um papel fulcral, moldando paisagens, tradições e modos de vida ao longo dos séculos. Em Portugal, o azeite encontra-se profundamente enraizado na história e na identidade do país, valorizado tanto pela sua qualidade reconhecida internacionalmente, como pelo seu papel central na vida rural e nas práticas alimentares tradicionais. Paralelamente, a crescente valorização dos produtos endógenos e das experiências diferenciadoras no setor turístico tem conferido ao azeite um novo protagonismo enquanto motor de desenvolvimento territorial e recurso distintivo para o turismo. Neste contexto, o Olivoturismo, compreendido como o conjunto de práticas turísticas relacionadas com a oliveira e o azeite, tem vindo a afirmar-se em vários países, integrando vertentes culturais, gastronómicas, educativas, naturais e sensoriais, proporcionando experiências que enaltecem o património agrícola e imaterial dos territórios. Apesar do reconhecimento do azeite português internacionalmente e da riqueza patrimonial da olivicultura nacional, o Olivoturismo em Portugal carece de uma investigação científica sistematizada, sobretudo, a nível regional. Esta lacuna é particularmente evidente em Trás-os-Montes, região produtora de destaque, reconhecida pela sua tradição milenar, pela qualidade diferenciada do azeite DOP e pelas paisagens singulares. Apesar do elevado potencial, o Olivoturismo na região permanece subvalorizado e pouco estruturado em termos de planeamento turístico e valorização territorial. O presente estudo justifica-se por duas razões centrais: no plano académico, pretende aprofundar o conhecimento sobre o Olivoturismo em Portugal, acrescentando valor à reflexão sobre as suas práticas, motivações e impactos. Num contexto mais prático, visa avaliar o potencial diferenciador do azeite e identificar oportunidades para o desenvolvimento de experiências turísticas em Trás-os-Montes. An ancestral symbol, olive oil embodies a cultural essence that transcends civilisations. It constitutes a deeply rooted element of identity in the territories where it is produced, playing a central role in shaping landscapes, traditions, and ways of life over the centuries. In Portugal, olive oil is profoundly embedded in the country's history and identity, valued both for its internationally recognised quality and its central role in rural life and traditional dietary practices. At the same time, the growing appreciation of local products and unique experiences within the tourism sector has conferred upon olive oil a renewed role as a driver of regional development and a distinctive resource for tourism. In this context, Olive Oil Tourism, understood as the set of tourism practices associated with the olive tree and olive oil, has been gaining traction in several countries. It integrates cultural, gastronomic, educational, environmental, and sensory dimensions, offering experiences that celebrate the agricultural and intangible heritage of the regions involved. Despite the international recognition of Portuguese olive oil and the rich legacy of olive cultivation in the country, Olive Oil Tourism in Portugal lacks systematic scientific research, particularly at the regional level. This gap is especially evident in Trás-os-Montes, a prominent producing region renowned for its ancient traditions, the distinctive quality of its PDO olive oil, and its unique landscapes. Despite its considerable potential, Olive Oil Tourism in the region remains undervalued and insufficiently structured in terms of tourism planning and territorial development. This study is justified by two main reasons: academically, it seeks to deepen knowledge about Olive Oil Tourism in Portugal, contributing to critical reflection on its practices, motivations, and impacts. Practically, it aims to assess the differentiating potential of olive oil and to identify opportunities for developing tourism experiences in Trás-os-Montes. |
